This apple cake is simple and quick to make (simple and quick to eat either). There are loads of apples and just a little bit of batter, so for a moment you can fool yourself it might be healthy :). Last weekend had an honour to bake it twice as half a cake would be gone instantly. Very suitable for autumnish evenings.
Simple apple cake (adapted from Llamas valley)
3 big firm apples, peeled, cut in half, core removed and sliced thinly
100 g butter, melted and cooled
100 g caster sugar
2 eggs, room temperature
100 ml sour cream/kefir/yogurt, room temperature
150 g all purpose flour
1 1/2 tsp baking powder
pinch of salt
1 tsp cinnamon
icing sugar to dust
Preheat your oven to 180C and grease 23 cm round cake pan.
Dust sliced apples with cinnamon and mix well.
Whisk eggs with sugar until pale, fluffy and double in size. Mix in melted butter and sour cream. Sift the flour, baking powder and salt into the mixture, mix well. Add apples and mix so the apples would be covered in cake batter well.
Gently spoon the mixture into prepared cake tin and bake for 45 minutes or until skewer inserted comes out clean.
Leave to cool. Dust with icing sugar and serve.
Enjoy.
